Would it be complex to retrofit a Primitive Cockpit to a "modern" one?

Cockpit engine and armor, the components that are primitive in the first place are relativly easy swaps.  remember we have a cannon example of this being done by a Mercenary unit in the form the Devil's Brigade Commander converting a 1R Gladiator into a wholly modern configuration.  the Chassis on primitive mechs is still 10% of mass so you should be easy so long as you don't try to "Modify with endo steel"

My guess was that cockpit and armour were easy.
Engine, I saw it as more difficult (at least on remote planets) because of the radiations.

remember these are clean fusion engines, no ionizing radition would be emitted, particularly if completly turned off as you would want to do during an engine swap.

But according to the rules, you can't change an engine without the proper installations.
And my idea is not to optimise everything (that would be too easy ;)).

And according to the rules, changing a Cockpit is a Class F Refit, so this is a no-go.

In my opinion, the cockpit would be the trickiest part of any Mech to swap out. Imagine taking the cockpit out of a Boeing 747 produced in the '70's and installing it into a brand spanking new 787 dreamliner. This is the electronic heart of every Mech, where the life support, targeting, security, myomer control, electronic warfare, etc systems all come together. It would be a nightmare of cabling, junctions, connections, etc and would require the appropriate facilities for installation.

Just look at the Atlas Cheetah or the IAI Kfir to see that for fighters, this is not so complex.
