Large Bowl
3 Cups White Sugar
1/2 cup White Corn syrup
2/3 cup Water
1/4 Teaspoon of Salt
2 Egg Whites
1 cup of chopped nut meat(Walnuts are traditional but any kind can be used)
1 Teaspoon Vanilla.
Boil sugar, syrup, water and salr together until it forms a hard ball when tried in cold water.
If using a candy thermometer cook to 270 degree's. Just before removing the syrup from the range, place the unbeaten egg whites
in large mixing bowl mix dial to 20 and beat egg whites until they are stiff but not dry, about 2 minutes.
Slowly pour the hot syrup over the egg whites, takeing care not to pour much syrup at a time or the egg whites will curdle.
After the syrup is all added, continue to beat until the mixture becomes stiff.
Add Vanilla and nut meats and continue to beat until candy will hold its shape.
This mixing process requires about 8 to 10 minutes
